The Hummingbird Room was originally located in a small inn in the village of Woodward, 45 mins. east of State College. Beginning with 22 seats in the fall of 1993 , the restaurant rapidly expanded .The Sarnows were able to purchase the Maj. Jared Fisher estate in Spring Mills in the summer of 1995.

The estate was originally part of an 800 acre land grant. The Fishers moved to Penns Valley in the 1830s and were responsible for the construction of several local landmarks including a mill, an academy and a still operating general store.

The Sarnows purchased the Fisher Estate from the Davises, a family of twelve. Eric & Claudia spent the summer converting the historic register home into a restaurant & the Hummingbird Room opened in its present location in the fall of 1995. The Sarnows were given an award of excellence by the Historical Society in December of 1995 for their restoration of the home .
